The plant

One of the few oils pressed from fruit flesh rather than seed — closer in that respect to olive than to almond. The avocado is also an evolutionary orphan: its large seed was suited to being swallowed whole by megafauna that have been extinct for ten thousand years, and without human cultivation it would likely have gone with them. The oil is deep green, heavy, and rich in oleic acid and unsaponifiables.
