The plant
The almond is a stone fruit whose flesh nobody eats. What we call the nut is the seed inside the pit, and the thin leathery hull around it is the part that would have been the peach. The tree flowers before it leafs, which is why an almond orchard in late winter looks like snow that arrived from underneath. Sweet almond oil is one of the oldest cosmetic oils in continuous use, and one of the least dramatic.
