Sunflower

What looks like one flower is hundreds — a disc of tiny florets ringed by petal-like rays, each floret making one seed. Young sunflowers track the sun across the sky and turn back overnight; mature ones stop, facing east. The oil is high in linoleic acid and vitamin E, and it is the least exotic ingredient in this library, which is rather the point: it is a good oil that does not need to be rare.

A neutral, linoleic-rich oil that carries the heavier butters without adding weight.
