The plant

Jasmine will not survive distillation — the heat destroys the very compounds worth having — so it is extracted rather than distilled, and the result is an absolute rather than an essential oil. The flowers open at night and are picked before dawn while still closed or barely opening. It takes several thousand flowers to make a single gram.
