Theobroma means food of the gods, and the tree behaves like something that expects attention: it fruits directly from its own trunk, is pollinated by midges rather than bees, and will not set fruit outside a narrow band of the tropics. The butter pressed from its fermented, dried seeds is hard at room temperature and melts within a few degrees of body heat — the same property that makes chocolate snap and then disappear.
